Thanksgiving Recipes by Cindi Avila!

I’m not sure about you all but sometimes with everything going on in my life, I just don’t have time to fully prepare myself for the holidays. But, I’m in luck this year… and so are you if you are in need of some last minute recipe ideas like I am.

Cindi Avila, renowned vegetarian chef, has prepared a few recipes using Lightlife products just for us!

 

Cheddar Biscuits with Lightlife Smart Ground® Original

Makes 12 biscuits

Ingredients:

  • 2 1/4 cups self-rising flour
  • 1 package Lightlife Smart Ground® Original
  • 3/4 cup butter (or vegan butter substitute) – soften for 30 minutes prior to use
  • 1/2 cup melted butter (or vegan butter substitute)
  • 1 cup plain soy milk
  • 3 ounces cheddar cheese, shredded (or vegan cheddar substitute)
  • 1 tablespoon garlic powder
  • 1 teaspoon salt

Directions:

Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and lightly flour paper. Cut solid butter into ¼ inch strips. In a mixing bowl, combine flour, solid butter, Lightlife Smart Ground® Original, soy milk & cheese. Mix ingredients together. Pour mixture on floured waxed paper. Pat the dough out with your hands until dough is not sticky (add a little flour if necessary or if it’s too thick add a little water). Cut biscuits with a biscuit cutter (if you don’t have a biscuit cutter use an ice cream scooper). Bake on a cookie sheet in preheated oven for 15-20 minutes, or until golden brown. In the meantime, combine melted butter, garlic powder and salt. Brush over baked biscuits immediately upon removing from oven.

 

Turk’y Cordon Bleu

Serves 2

Ingredients:

  • 1 Package Lightlife Smart Cutlets® Original
  • 1 Package Lightlife Smart Deli® Ham
  • 2 tablespoons spicy brown mustard
  • 2 slices of Swiss cheese
  • ½ cup breadcrumbs
  • ¼ cup flour
  • 3 tablespoons olive oil

Directions:

Preheat oven to 375 degrees Fahrenheit. Put oil in large sauté pan, heat on medium-high. Put flour on a plate and breadcrumbs on another plate. Brush cutlets with water then dredge in flour, and then in the breadcrumbs. When oil is hot, sauté cutlets for about 2 minutes on each side or until they are golden brown. Place cutlets on a baking sheet. Spread a layer of spicy brown mustard on each cutlet, then place one slice of Lightlife Smart Deli ® Ham and finally a slice of Swiss cheese. Bake in preheated oven for 15 minutes, or until cheese is melted.

 

Lightlife Smart Sausage Stuffing

Serves 8

Ingredients:

  • 1 package Lightlife Smart Sausages® Smoked Style
  • 4 tablespoons of olive oil
  • 1 cup of vegetable broth
  • 1 cup of celery (diced)
  • 2 cups of onion (diced)
  • 1 tablespoon salt
  • 5 cups of corn bread (cubed)
  • 4 cups of white bread (cubed)
  • 1/3 cup parsley

Directions:

Preheat oven to 350 degrees Fahrenheit. In large skillet, add olive oil and heat over medium-high heat. Add celery and onion and cook until soft (about 12 minutes). Add Lightlife Smart Sausages® Smoked Style, parsley and salt. Add vegetable stock while stirring. Cook for two minutes. Let cool. In large bowl, mix breads with vegetable mixture. Carefully mix with spatula. Place in large casserole dish. Bake 40-45 minutes in preheated oven, or until golden brown.
