Vegan Slow Cooker Recipes…MmMm Good!

I must say – Kathy Hester’s cookbook The Vegan Slow Cooker has changed my cooking routine tremendously! I have yet to make something that hasn’t been absolutely outstanding. As I’ve already mentioned, slow cookers are not my forte. However, I’d like to renege on my previous comment and change it to – I now have three new all-time favorite recipes made in a slow cooker! Woohoo!

If you can’t tell, I’m a little excited about these recipes so I think I’m going to stop talking and just give you the recipes to try on your own at home. Trust me, you won’t regret it. ;)

Tempeh Braised with Figs and Port Wine

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 pkg (8 oz) Tempeh
  • 8 fresh figs, each cut into 6 wedges
  • ½ cup water
  • 1 cup port wine
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon vegan chicken-flavored bouillon
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • Salt and pepper to taste

*You can use dried figs in place of fresh. The stew will be a bit sweeter – you may want to add another teaspoon of balsamic vinegar to balance.*

 

The night before: 

Heat the oil in skillet over medium heat and sauté the onion until translucent, 3-5 minutes. Add the garlic and sauté for 1 minute longer. Combine in an airtight container with the cut-up tempeh and figs and store in the refrigerator. 

In the morning: 

Combine all the ingredients. Cook on low for 6-8 hours.

Mango Coconut Rice Pudding

Ingredients:

  • 2 mangos, peeled and diced
  • 1 ½ cups Arborio rice
  • 1 can light coconut milk
  • 1 ½ cups vanilla flavored nondairy milk
  • ½ cup sugar, maple syrup, or agave nectar
  • 1 teaspoon vanilla extract

                  

Oil the crock of your slow cooker. Add all ingredients and cook on high for 1 ½ – 2 hours. Add more nondairy milk if mixture isn’t creamy enough.

                              

I also made her Better-Than-The-Classic Shepherd’s Pie with Tempeh and Gimme Lean Sausage which was out of this world. You’ll have to go out and buy her book for the recipe though! ;)
