Vegetarian Valentine’s Day Recipes & Treats

What’s more perfect than a vegetarian Valentine’s Day Recipe for that special someone to let them know you care?? Ditch those candy hearts and expensive chocolates, and make your loved one a meatless meal with a couple of my favorite vegetarian recipes.

Nothing says I love you like a delicious, home cooked vegetarian Valentine’s Day recipe that shows your special someone just how much you care about them and their health! 😉

This year, Lightlife’s Catalan-style Spinach with Sweet & Sour Cutlets and Twice Baked Potato with Smart Bacon are on my vegetarian Valentine’s Day menu. Then I plan on finishing up with Post Punk Kitchen’s vegan Peanut Butter Blondies for dessert! MmMm good.

Catalan-style Spinach with Sweet & Sour Cutlets

Ingredients:

  • 1 pkg Smart Cutlets Spicy Sweet & Sour
  • 4 Tbsp extra virgin olive oil, divided
  • ½ cup dried craisins
  • 1/3 cup pine nuts
  • 3 cups (5 oz) baby spinach leaves, cleaned and dried
  • ¼ tsp salt
  • 1/8 tsp freshly cracked pepper
  • Dash or two cayenne pepper

 

Directions:

In Dutch oven place 1 tablespoon olive oil. Add cutlets (without the marinade). Cook over medium heat until lightly browned (1 to 2 minutes); turn over and continue cooking, until lightly browned (1 to 2 minutes). Remove from pan, cut into strips; keep warm.

In same pan, place 3 tablespoons olive oil. Add craisins and pine nuts. Cook over medium heat, stirring frequently, until pine nuts are lightly browned and craisins are puffy (2 to 3 minutes).

Add spinach leaves, salt, pepper, and cayenne pepper. Continue cooking, stirring frequently, until spinach is just wilted (1 to 2 minutes).

Place spinach mixture on plate and top with cutlet strips.

  4. I’m a vegetarian and for myself this made my health and fitness much better. I dont want to go back again eating those meat with lots of unhealthy transfats that clogs your arteries.
