Last week I attended Lightlife’s exclusive tasting event in New York City. Take a look!
Vegetarian chef, Cindi Avila, hosted an absolutely incredible event showcasing her delicious vegetarian and vegan recipes using Lightlife products. Before the event, I hadn’t had the pleasure of meeting Cindi, so I was so really quite excited for the night. I couldn’t wait to meet the talent behind the newest Lightlife recipes I’ve been making at home lately.
She created numerous recipes that were suitable for meals at home, at the office, entertaining outdoors, or vegan lifestyles. But really, the best part was that these were all meals that could suite vegetarians, meat reducers, and even meat eaters alike. I know that when I make them all at home, my omnivore boyfriend will just love them.
They were all so good, that to tell you the truth it’s been really hard for me to pick a favorite. But of course I did, just so I could share it here with you all.
Wild Rice and Chick’n Salad
- 1 package Smart Strips Chick’n
- 3 cups cooked wild rice
- 1 – 8 ounce can sliced water chestnuts
- 1/3 cup chopped green onions
- 2/3 cup light mayonnaise
- 1/3 cup fat free milk
- 2 tablespoons lemon juice
- 1/4 teaspoon dried tarragon leaves
- 1/8 teaspoon ground black pepper
- 1 cup seedless red grapes
- 1/2 cup unsalted cashews
In a large bowl, combine the Smart Strips Chick’n, rice, water chestnuts, and green onions. In a small bowl, combine mayonnaise, milk, lemon juice, tarragon and pepper. Pour over chick’n mixture; toss to coat. Cover and refrigerate for 2-3 hours. Just before serving, gold in grapes and sprinkle with cashews.
In typical Lightlife fashion, the event was very eco-friendly. Bamboo plates and utensils were used, with only fabric napkins allowed! Waste not, want not. :) Besides meeting Cindi, I had a wonderful time meeting all of our guests too. Seeing a mixture of my fellow vegetarian bloggers, with media representatives that may or may not have been vegetarians themselves, was a very refreshing feeling. Everyone that I spoke with just raved about the food. It really goes to show you that eating less meat can be an easy transition, even for those who think that they would never be able to fully go veg.
