Memorial Day weekend is one of my favorite weekends of the year. Even if it’s been warm enough outside already, it really is the first weekend that everyone makes a point to get to the beach or host a BBQ. It also happens to be the same weekend as my best friend’s birthday, so needless to say, it’s always a fun filled weekend!
This year my friend is renting a house for the weekend, a block away from the beach. There will be lots of people and of course, lots of food too! For myself, and my fellow veggie-loving friends that may be coming, I plan on bringing plenty of Lightlife’s Smart Sausages Italian & Smoked style. The smoked style is my favorite on the grill. Just pop-em in a bun and add some spicy brown mustard – so good. They only take a few minutes to cook on the grill. So if you try them out this weekend, feel free to give all your meat-eating friends a little wink as you take your first satisfying bite while they are still waiting for their meals to finish cooking!
I’m also bringing Lightlife’s classic Tempeh Salad to the party. Always a party pleaser – even for those who don’t even know what tempeh is … yet. 😉
- 2 packages Lightlife Tempeh
- ½ cup green pepper, diced
- ½ cup red onion, diced
- 1 cup celery, diced
- ½ cup sweet relish
- 1 tsp. turmeric
- 1 tsp. prepared mustard
- 1 tsp. fresh dill, cilantro or parsley
- ¼ tsp. black pepper
- ¾ cup soy mayonnaise
- 1 tsp. horseradish (optional, for extra zing!)
Dice tempeh into ½ inch cubes and steam for 15 minutes to tenderize. Cool completely. Place in mixing bowl. Add remaining ingredients. Mix well. Serve on a bed of lettuce garnished with tomato wedges and olives.
