Lazy Summer Mornings = more time for breakfast!

Nothing beats waking up to birds chirping outside and the sun beaming through my windows around the curtains I purposefully left open just a smidge. Aaah lazy summer mornings…


Who has the time to cook breakfast in the middle of the week? I eat breakfast every morning, but I definitely stick to a piece of fruit or granola bar more often than not as I’m racing out the door. I don’t know about you, but to me, summer means more time for vacation, visitors and home cooked breakfasts! Whether you’re entertaining guests or simply enjoying the beautiful sunshine on a Saturday morning, making breakfast always seems to add a special touch to the start of your day.

Conveniently, Lightlife has the perfect addition to whatever I feel like making in the morning hours. Fakin’ Bacon and Smart Bacon are two staples in my fridge – you can never go wrong with either of them whenever you have that guilty craving for bacon. To be honest though, breakfast sausage was the one thing that I missed the most after becoming vegetarian, and Gimme Lean Sausage turned out to be my life saver. Breakfast sausage patties here I come!


Even if you’re in the mood for something spicy – as I often am when I eat a late breakfast – Smart Sausages Chorizo works great in your favorite tofu or egg scramble. Going the pancake route? Smart Links with maple syrup should be taste-tested immediately if you haven’t had them already.

Try this savory frittata with Smart Tenders the next time you have guests for breakfast. You may surprise your visitors and end up turning them on to the veggie way of life… or maybe just the veggie way of breakfast. 😉

Savory Breakfast Frittata

Serves 6-8











  • 2 tablespoons extra virgin olive oil
  • ½ package (3 tenders) Lightlife Smart Tenders Savory Chick’n
  • ½ cup (3-ounces) asparagus, cut into 1 ½-inch strips
  • ½ cup colored peppers, cut into 1 ½ -inch strips (red, yellow, orange)
  • ½ cup sliced yellow onion
  • 3 eggs
  • 3 egg whites
  • 2 tablespoons fat free half and half
  • ¼ cup (2 ounces) cream cheese, softened, in small pieces
  • ¼ teaspoon salt
  • 1/8 teaspoon freshly cracked pepper


In oven proof, 10-inch, non-stick skillet place olive oil. Add Smart Tenders. Cook over medium heat until lightly browned, (2 to 3 minutes); turn over, continue cooking until lightly browned (1 to 2 minutes). Remove from pan, shred, and set aside.

In same pan, add asparagus, peppers, and onion. Cook, stirring occasionally, until vegetables soften slightly (3 to 4 minutes).

Meanwhile, in medium mixing, bowl place eggs, egg whites, half and half, cream cheese. And salt and pepper. Using a wire whisk, stir the eggs until mixture is slightly fluffy (mixture is lumpy). Pour over vegetables in pan and add shredded Smart Tenders.

Continue cooking, over medium heat, 2 minutes; lift edges slightly to allow eggs to flow under. Continue cooking 2 minutes. Repeat lifting edges to allow eggs to flow under. Cook additional 2 minutes or until bottom is light brown.

To finish cooking top of eggs, place pan under low heat broiler. Broil 30 seconds to 1 minute or until frittata is puffy and light brown.

Remove from oven and serve immediately.

    But yeah, I love these summer mornings! There’s no rush and I can do my favorite thing which is eat! I think I’m just ridiculous though because I’d wake up at 6:15am and when I’m done eating it’s like, 8…
